  • Chicken Drumsticks With Coffee Barbecue Sauce

    Ingredients

    • 1/2 c. ketchup
    • 1/3 c. packed dark brown sugar
    • 1/2 c. brewed espresso
    • 1/4 c. cider vinegar
    • 1 med onion, coarsely, minced
    • 3 x jalapeno, halved, seeded
    • 3 x garlic, cloves, crushed
    • 2 Tbsp. molasses
    • 2 Tbsp. dry mustard pwdr
    • 1 Tbsp. water
    • 2 Tbsp. Worcestershire sauce
    • 2 Tbsp. grnd cumin
    • 4 tsp cayenne pepper Chicken Drumsticks
    • 12 x chicken, drumsticks, well rinsed, patted dry coarse salt, and freshly cracked black pepper vegetable oil, for brushing grill

    Directions

    1. Mix mustard pwdr with 1 tbsp of water to make mustard mix.
    2. In a saucepan, prepare the barbecue sauce by combining ketchup, brown sugar, espresso, cider vinegar, onion, jalapenos, garlic, molasses, mustard mix, Worcestershire, cumin and cayenne pepper.
    3. Bring to a boil on medium heat and cook for 10 min.
    4. Let cold completely.
    5. Put the chicken and the sauce in a resealable plastic bag and seal.
    6. Marinate in the refrigerator for at least 3 hrs or possibly overnight.
    7. Remove chicken from barbecue sauce.
    8. Cook the barbecue sauce in a pot over medium heat.
    9. Bring to a boil.
    10. Reserve sauce for brushing the chicken.
    11. Chicken Drumsticks:Heat a grill on medium heat.
    12. Season chicken with salt and pepper.
    13. Brush grill with oil.
    14. Grill chicken for about 8 to 10 min per side or possibly till chicken is cooked through reaching an internal temperature of 175 to 180 degrees F, brushing with the sauce.
    15. This is a killer barbecue sauce with a kick! I've added fresh-brewed espresso to my homemade barbecue sauce and was thrilled with the incredible depth of flavour which resulted. Try it with Cornish hens, turkey or possibly quail as well.
    16. Yield is 4 servings.
