  • Cheesy Beef And Rice Casserole

    Ingredients

    • 1/2 lb grnd round
    • 1 c. minced onion
    • 1 c. minced green bell pepper
    • 1/4 c. water
    • 1 Tbsp. chili pwdr
    • 2 tsp grnd cumin
    • 1 1/2 tsp sugar
    • 1/2 tsp dry oregano
    • 1 x 14.5 Ounce Can diced tomatoes undrained
    • 1 x 4.5 Ounce Can minced green chiles liquid removed
    • 3 c. cooked rice long-grain
    • 1 c. fat-free lowfat sour cream
    • 1/2 c. green onions sliced
    • 1/4 c. skim lowfat milk
    • 3/4 c. lowfat cheddar cheese sharp

    Directions

    1. Preheat oven to 375 F. Cook first 3 ingredients in a large nonstick skillet over medium-high heat till meat is browned, stirring to crumble. Add in water and next 6 ingredients (water through chilies); bring to a boil. Cover, reduce heat, and simmer 10 min. Uncover and simmer an additional 2 min. Remove from heat; set aside.
    2. Combine the rice, lowfat sour cream, sliced green onions and lowfat milk in a bowl.
    3. Spoon rice mix into a 9-inch baking dish. Top with beef mix; sprinkle with cheese. Bake at 375 F for 10 min or possibly till thoroughly heated. Let stand 5 min before serving.
