Carrot Raisin Salad
I grow carrots in my garden and when I plant, I get carried away, this year I had more carrots than I knew what to do with so I not only cooked, froze, glaze, roasted carrots I placed them in my toss salads and stir fries and decided to do the old style recipe of carrot raisin salad. My family loved it, so here you go. Ingredients
- 10 Carrots, shredded, not too thin
- 1/2 cup raisins golden or black
- 1/2 cup chunk pineapple
- 1/2 cup mayo
- 1 Tbs vinegar
- 3 Tbs sugar
- 1/2 Tsp celery seeds
Directions
- Blend carrots, raisins and pineapples together, set aside
- Make dressing
- Mayo, vinegar, sugar and celery seeds together and blend well
- Add this to your carrot mixture and chill for an hour
- Serve on a bed of lettuce
