Carrot/Raisin Salad
Ingredients
- 8 x Carrots, peeled (up to 10)
- 1 c. Raisins, or possibly more to taste
- 1/2 c. Orange juice Splash of balsamic vinegar, or possibly more to taste
- 1 can Cubed pineapple, with some juice
- 1/2 c. Shredded apple (optional) (up to 3/4)
Directions
- Using food processor if handy, grate carrots. Mix with all remaining ingredients, including food processed apple if you like, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
