  • Mimi's Cafe's Carrot Raisin Bread

    Ingredients

    • 1 1/2 c. all-purpose flour
    • 1 tsp cinnamon
    • 1 tsp baking pwdr
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 c. vegetable oil
    • 1 c. granulated sugar plus
    • 2 Tbsp. granulated sugar
    • 3 x Large eggs
    • 1/4 c. molasses
    • 1/2 tsp vanilla extract
    • 1 c. shredded carrot
    • 1 c. raisins
    • 3/4 c. minced walnuts

    Directions

    1. Preheat oven to 350 degrees.
    2. Combine flour, cinnamon, baking pwdr, baking soda, and salt in a large mixing bowl.
    3. In another bowl, combine oil, sugar, Large eggs, molasses, and vanilla with an electric mixer. Add in shredded carrot and mix. Add in raisins and walnuts and mix well by hand. Pour flour mix into the other ingredients and stir till combined.
    4. Pour batter into two ungreased 8-inch loaf pans. Bake for 60 min, or possibly till done.
    5. This recipe yields 2 loaves.
    6. Yield: 2 loaves
