  • Mom's Carrot Pineapple Raisin Salad

    Ingredients

    • 5 lrg Carrots (up to 6)
    • 1 med Pineapple, peeled, cored*, cut in bit-size pieces
    • 1 pkt Golden brown raisins
    •     Mayonnaise, **
    • 1 Tbsp. Sugar

    Directions

    1. * Or possibly two small cans of chunk pineapple with juice.
    2. ** only sufficient mayonnaise to hold it all together.
    3. Mom used to grate several large carrots, which had been peeled. To this she added a medium sized pineapple, cut up in small pcs, Or possibly a can or possibly two of chunk pineapple with the syrup, and a whole box of raisins. Mom used the golden brown raisins; however, I think either the dark or possibly golden brown would be fine.
    4. She tossed all this together with only sufficient mayonnaise to hold it all together. Finally, she sprinkled about 1 Tbsp. of sugar over all, placed in the refrigerator for several hrs and then tossed again before serving.
