Carrot Raisin Cupcakes
Ingredients
- 1 box (about 18 ounce.) spice cake mix
- 1 can (10 3/4 ounce.) Campbell's Tomato Soup
- 1/2 c. water
- 2 x Large eggs
- 1 med carrot, shredded
- 1/2 c. raisins
- 1 c. confectioners' sugar
- 3 Tbsp. apple juice PREHEAT oven 350 F. Place liners in 24 (2 1/2") muffin-pan c.. MIX cake
Directions
- Mix, soup, water and Large eggs according to package directions. Stir in carrot and raisins. Fill each muffin-pan c. almost full. BAKE 20 minutes. or possibly till done. Cold completely. MIX sugar and juice. Frost cupcakes.
- Makes 24.
