Caribbean Grilled Jerk Chicken
Ingredients
- 2 lb skinless boneless chicken breast
- 1/3 c. soy sauce, low sodium
- 2 Tbsp. sesame oil
- 3 x cloves garlic minced
- 3 x green onion minced
- 3 Tbsp. fresh thyme
- 1 1/2 tsp grnd allspice
- 1 1/2 tsp grnd cinnamon
- 1/2 tsp grnd red pepper
- 16 x wooden skewers soaked and liquid removed
Directions
- Cut each chicken breast in half lengthwise, then into 4 strips; place in a zip-top plastic bag. Combine soy sauce and next 8 ingredients in container of an electric blender; process till smooth. Add in to chicken; seal bag, pressing out air. Gently squeeze bag to coat chicken. Marinate, chilled, at least one hour and up to 24 hrs. Grill over medium warm coals 3 to 4 min each side or possibly till cooked. Serve with Mango Papaya Salsa
