    A light, flaky biscuit topped with egg, sausage, and cheese - in a convenient muffin.

    Ingredients

    • 7 eggs
    • 1 cup baking mix (Bisquick, Pioneer, etc.)
    • 1/2 cup water
    • 1 tbsp maple (flavored) syrup [optional]
    • 3/4 cup chopped/crumbled italian sausage, breakfast sausage, or bacon
    • 1/4 cup chopped onion
    • 1/2 cup water
    • 1 tsp black pepper
    • 1/2 tsp sea salt
    • 2 tbsp chopped fresh cilantro
    • 1 cup shredded cheddar cheese
    • ** Optional add-ins: diced tomato, chopped bell pepper or jalapeno, diced mushrooms, chopped spinach

    Directions

    1. Preheat oven to 350 degrees.
    2. Mix 1 egg, baking mix, and water [and maple syrup if desired] in a mixing bowl to make the biscuit batter. *** It should be dough-like and pull away from the sides of the bowl when mixed. Temperature & altitude can make a difference in how the dough "acts," so if it is too runny, slowly add a little more baking mix; if it is too thick add a little more water until the right consistency is reached.
    3. Cook sausage or bacon and onion in a skillet.
    4. Mix remaining eggs, cilantro, salt, and pepper in a mixing bowl and beat thoroughly.
    5. When sausage or bacon is done, stir in egg mixture and lightly scramble (you don't want the eggs to get too done - mixture should still be somewhat moist). *** If using any of the optional add-ins, you should mix them with the eggs in this step.
    6. Spoon a small amount of batter into each cup of a lightly greased muffin pan (or use paper baking cups).
    7. Spoon egg mixture on top of batter in each cup.
    8. Bake for 12 - 15 minutes or until a toothpick inserted to the bottom of the muffin comes out clean.
    9. Top with shredded cheese and bake for an additional 3 - 5 minutes until cheese is melted & slightly crisp.
    10. Remove from muffin cups using a lightly greased butter knife around the edges and carefully lifting.
    11. Serve with butter or jam.
