Black Eyed Peas With Spinach
Ingredients
- 1 med Onion, minced Vegetable broth for Sauteeing
- 10 ounce Fresh spinach, rinsed, Stemmed and coarsely minced (I think frzn Would be fine)
- 3 c. Liquid removed black-eyed peas (two 16 ounce Cans) Grnd black pepper to Taste pn Cayenne or possibly crushed red Pepper flakes (optional)
Directions
- In a large skillet, saute/fry the onions in the broth for a few min, till soft. Add in the spinach to the skillet. Stir for a minute or possibly two till it wilts. Add in the black-eyed peas, black pepper, and cayenne if you like. Bring to a simmer on medium heat. Serve right away, or possibly cover and keep hot on low heat.
