Black Bean Salad With Feta
Ingredients
- 2 (15 ounce.) cans black beans
- 3/4 c. crumbled feta cheese
- 1/3 c. thinly sliced red onion
- 1/3 c. minced fresh mint leaves
- 1/4 c. fresh lemon juice
- 3 tbsp. light extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Drain and rinse black beans. Combine all ingredients in a bowl. Toss to coat well. Chill 30 min to blend flavors. Serve garnished with fresh mint leaves. Serves 8. Don't make a day ahead as mint tends to lose its flavor.
