    Bingka Pisang (Banana Cake)

    Soft, chewy and dense cake made with over-ripe bananas.

    Ingredients

    • 2 cups mashed bananas
    • 3/4 all purpose flour
    • 1 cup salted butter
    • 1/2 cup castor sugar
    • 3 eggs
    • 1 tsp vanilla essence

    Directions

    1. Cream butter and sugar till sugar dissolved and it becomes light yellow mix.
    2. Add eggs one at a time and continue creaming.
    3. Fold in flour followed by the mashed bananas.
    4. Ensure there's no little lumps of flour inside.
    5. Combine in vanilla essence and pour mixture into a greased pan.
    6. Bake at 175C for one hour or until bingka is cooked.
