Berry,Yogurt and Rice Pudding
Here is a twist to the old classic yogurt berry and rice pudding recipe.You could also use soy milk if you wish.Nice cool dessert for a hot summer afternoon. Ingredients
- 1 cup short grain rice
- 1500 mls coconut milk
- 2 stalk lemon grass,trimmed and crushed
- 8 tbsp raw sugar powdered fine
- 2 cups plain thick yogurt
- 4 cups mixed berries
- 1/2 pinch salt to taste
Directions
- Place rice,milk,lemon grass and sugar in a thick bottomed pan,bring to boil and stir well.Let it simmer for 45 mins on reduced heat.
- Let it cool down completely,then discard lemon grass.
- Stir in yogurt,add salt and stir to mix well.If making ahead cover and chill for 2 hours.Add berries.Spoon into glasses.
