Exotic Rice Pudding
Ingredients
- 900 ml Soya lowfat milk, (1 1/2 pints)
- 40 gm Creamed coconut, (1 1/2 ounce)
- 1/2 tsp Grnd cinnamon
- 1 pch Grnd cloves
- 75 gm Pudding rice, (3oz)
- 25 gm Dark soft brown sugar, (1oz) Exotic fruits: mango, kiwi fruit, banana, paw paw and pineapple Pistachio nuts, minced
Directions
- Place the lowfat milk, coconut and spices in a saucepan and heat gently till the coconut has dissolved.
- Stir in the rice and sugar.
- Bring to the boil, then reduce heat and simmer for 30-40 min stirring occasionally till the rice is tender.
- Serve with the exotic fruits and pistachio nuts.
- NOTES : A vegan rice pudding with an exotic flavour.
