  • Beef Tenderloin

    Ingredients

    • 1 beef tenderloin roast (about 3 lbs)
    • 4 cloves garlic (turn into paste)
    • Salt
    • Course ground pepper
    • Non-stick cooking spray
    • Fresh Rosemary
    • 1 medium onion (sliced)

    Directions

    Beef tenderloin is one of my favorite meat cuts. It is expensive, but it is worth it! Many people cook it in many different ways. I have my own way of cooking it, where I don’t spend too much time in the kitchen.

    Beef Tenderloin over Sparagus

    The best part of cooking this cut of meat is that you don’t need too much seasoning, and the preparation is a no brainer.

    Ingredients

    Make It

    Preheat oven at 350˚ F.

    Slice the roast.

    Season with garlic, salt and pepper to taste.

    Spray a large skillet with non-stick cooking spray, and heat over medium heat.

    Brown each side of the slices on the skillet (do not cook, only brown for about one minute or so.)

    Transfer the slices to a roasting pan.

    Add the Rosemary and place the sliced onion around the pieces of roast.

    Bake the meat for 50 minutes (depending on the size of the roast) or until no pink is visible.

    Remove from oven: may be served over rice, vegetables, or mashed potatoes.
