    • 3 medium-size tomatoes, seeded, chopped
    • 1 (15 oz) can black beans, drained, rinsed
    • 3/4 cup fresh or frozen corn
    • 1/2 cup finely chopped red onion
    • 1/2 cup chopped roasted red bell peppers
    • 1 jalapeno pepper, finely chopped
    • 2 tbsp minced fresh cilantro
    • 1/4 cup lime juice
    • 1 garlic clove, minced
    • 1 tsp dried oregano
    • 1 tsp ground cumin
    • 1/2 tsp salt
    • 1/2 tsp ground coriander
    • Baked tortilla chips


    1. 1. In a large bowl, combine all ingredients except tortilla chips.
    2. 2. Cover and refrigerate for at least 2 hours before serving. Serve with baked tortilla chips.
