- 3 medium-size tomatoes, seeded, chopped
- 1 (15 oz) can black beans, drained, rinsed
- 3/4 cup fresh or frozen corn
- 1/2 cup finely chopped red onion
- 1/2 cup chopped roasted red bell peppers
- 1 jalapeno pepper, finely chopped
- 2 tbsp minced fresh cilantro
- 1/4 cup lime juice
- 1 garlic clove, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp ground coriander
- Baked tortilla chips
Directions
- 1. In a large bowl, combine all ingredients except tortilla chips.
- 2. Cover and refrigerate for at least 2 hours before serving. Serve with baked tortilla chips.
