Barley Bean Salad
Ingredients
- 2 c. cooked barley Or possibly other whole grains of your choice
- 15 ounce canned pink or possibly kidney beans, liquid removed and rinsed
- 2 x vine-ripened tomatoes, minced
- 1 x cucumber, minced
- 2 stalk celery, minced
- 1/4 c. minced fresh basil leaves
- 1 Tbsp. Dijon mustard
- 1/2 c. fat-free Italian dressing
Directions
- Combine all ingredients in a serving bowl and toss to combine. Cover and chill till chilled, about 30 min.
- Yield: 4 to 6 servings, calories: 237, fat: 2g, fiber: 14g.
