Ingredients
2 c. cooked barley Or possibly other whole grains of your choice
15 ounce canned pink or possibly kidney beans, liquid removed and rinsed
2 x vine-ripened tomatoes, minced
1 x cucumber, minced
2 stalk celery, minced
1/4 c. minced fresh basil leaves
1 Tbsp. Dijon mustard
1/2 c. fat-free Italian dressing
Directions
Combine all ingredients in a serving bowl and toss to combine. Cover and chill till chilled, about 30 min.
Yield: 4 to 6 servings, calories: 237, fat: 2g, fiber: 14g.
