Baked Tomato-Cheese-Spinach Pie
I had a pie shell to use and put this together one evening when I was rushed and it has become a favorite dish with my family. Ingredients
- 1-1/2 cup baby spinach
- 3 tomatoes cut
- 1-1/4 cups parmesan cheese
- one 9" pie shell
- For topping: 1/4 cup panko, 1/4 cup mozzarella cheese, 1/2 cup grated parmesan
Directions
- Pre Heat Oven 400 F
- Pop the pie shell into the oven and pre bake 6 minutes, remove, add cut tomatoes, spinach, cheese into the shell, add some spices (your choice-I used oregano, parsley, onion salt, garlic powder). Add topping (cheese/panko)
- Baked for 15 minutes or until golden brown.
- Serve with a side salad and garlic toast Yum!
