Baked Rice Pudding
We enjoyed this version of rice pudding, brought to a family dinner by my sister-in-law. For my tastes it’s best the day it’s made, so when there’s a crowd or potluck event, consider this ultimate comfort food for dessert. Ingredients
- 7 eggs
- 3/4 cup sugar
- 8 ounces ricotta cheese
- 2 cups milk
- 4 ounces evaporated milk
- 4 ounces crushed pineapple
- 1 1/2 teaspoons vanilla extract
- 2 cups cooked rice
- Cinnamon
- Whipped cream (optional topping garnish)
Directions
- Butter a 9x 13-inch glass baking dish. Heat oven to 325 degrees F.
- In large bowl beat eggs with sugar. Stir in ricotta cheese, milk and evaporated milk, pineapple, vanilla and rice.
- Pour into prepared baking dish and sprinkle cinnamon over top.
- Bake 40-45 minutes until set.
- Serve warm with (optional) whipped cream.
