Baked Rice Pudding

We enjoyed this version of rice pudding, brought to a family dinner by my sister-in-law. For my tastes it’s best the day it’s made, so when there’s a crowd or potluck event, consider this ultimate comfort food for dessert.

Ingredients

  • 7 eggs
  • 3/4 cup sugar
  • 8 ounces ricotta cheese
  • 2 cups milk
  • 4 ounces evaporated milk
  • 4 ounces crushed pineapple
  • 1 1/2 teaspoons vanilla extract
  • 2 cups cooked rice
  • Cinnamon
  • Whipped cream (optional topping garnish)

Directions

  1. Butter a 9x 13-inch glass baking dish. Heat oven to 325 degrees F.
  2. In large bowl beat eggs with sugar. Stir in ricotta cheese, milk and evaporated milk, pineapple, vanilla and rice.
  3. Pour into prepared baking dish and sprinkle cinnamon over top.
  4. Bake 40-45 minutes until set.
  5. Serve warm with (optional) whipped cream.
