Apricot Bars
Gooseberry Patch - Lesa Lafferty Ingredients
- 3/4 cup butter
- 1 cup sugar
- 1/2 tsp vanilla
- 1 egg
- 1/2 tsp salt
- 2 cup flour
- 1 1/2 cup coconut
- 8-oz. jar apricot preserves
- 1/2 cup pecans, chopped
Directions
- Cream the butter and sugar
- Add the vanilla, egg, salt, flour, and coconut
- Mix well
- Spread 3/4 of the mixture in a greased 11 X 7 inch overn-proof
- glass dish.
- Spread the preserves on top
- Combine the remaining quarter of the mixture and nuts
- Crumble on top of the preserves
- Bake at 350 F for 40 to 45minutes or until golden
- Cut into the bars while still warm
