  • Crunchy Apricot Bars

    Ingredients

    • 1 1/2 c. Apricots, dry, 11-ounce
    • 4 x Large eggs
    • 1 c. Sugar
    • 1 c. Brown sugar, packed
    • 1/2 tsp Salt
    • 1/4 tsp Cardamom, grnd
    • 1 tsp Lemon peel, grated
    • 1/4 c. Butter, melted
    • 2 c. All-purpose flour
    • 2 tsp Baking pwdr
    • 1 c. Toasted almonds, minced Powdered sugar

    Directions

    1. Soak apricots in warm water one minute and drain. Chop finely and set aside.
    2. Beat Large eggs with sugars, salt, cardamom and lemon peel till very light and fluffy. Stir in melted butter. Blend in flour and baking pwdr. Fold in apricots and almonds. Pour batter into greased 9x13 inch baking pan. Bake in preheated 350 degree oven for 35 min or possibly till cake tests done. Cold 10 min in pan then remove to wire rack to finish cooling. Sprinkle with sifted powdered sugar and cut into 36 bars when thoroughly cooled.
