  • Banana Apricot Bars

    Ingredients

    • 3 med Bananas, extra-ripe, peeled
    • 1/2 c. Butter or possibly margarine
    • 3/4 c. Brown sugar, packed
    • 2 x Large eggs
    • 1/2 c. Apricot or possibly peach preserves
    • 1 tsp Vanilla extract
    • 2 c. All-purpose flour
    • 1/2 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 1/2 c. Minced pecans
    • 1 c. Confectioner's sugar
    • 4 x -(up to)
    • 5 tsp Lemon juice

    Directions

    1. Heat oven to 350 degrees. Grease a 13x9-inch baking pan. Puree bananas to make 1-1/2 c..
    2. Cream together margarine and sugar. Add in pureed bananas, Large eggs, preserves and vanilla. Mix until well blended. (Mix may appear curdled.)
    3. Combine flour, baking pwdr, baking soda and salt. Add in to banana mix and mix till well blended. Pour into prepared pan.
    4. Bake at 350 degrees for 25-30 min.
    5. Meanwhile, blend lemon juice into confectioner's sugar to make a smooth, pourable glaze.
    6. Immediately after removing pan from oven, drizzle glaze over top. Cold 5 min. Remove from pan and cut into 36 bars.
