  • Passover Apricot Bars

    Ingredients

    • 1 c. margarine - (2 sticks)
    • 2 x egg yolks
    • 1 dsh salt
    • 1 c. sugar
    • 2 c. sifted matzo cake meal
    • 2 tsp grated lemon zest
    • 1 tsp vanilla extract
    • 1 c. apricot preserves
    • 1/4 c. lemon juice
    • 1/2 c. minced nuts

    Directions

    1. Heat the oven to 325 degrees. Grease the bottom and sides of a 9- by 13-inch pan.
    2. Beat the margarine and egg yolks in the bowl of an electric mixer. Add in the salt, sugar, matzo cake meal, lemon zest and vanilla and mix thoroughly. The mix will be crumbly. Pat three-fourths of the dough into the bottom of the pan; chill the remaining dough.
    3. Bake the crust till hard, 20 min.
    4. Mix the preserves and lemon juice and spread proportionately over the slightly cooled crust. Sprinkle the nuts and the crumbled remaining dough on top. Bake till the topping is golden, 30 to 35 min. Cold and cut into squares.
    5. This recipe yields 16 servings.
