Snowy Apricot Bars
Ingredients
- 1 pkg. (6 ounce.) dry apricots (1 1/3 c.)
- 1/2 c. hard butter
- 1/2 c. granulated sugar
- 2 1/2 c. Bisquick baking mix
- 2 c. packed brown sugar
- 4 Large eggs, beaten
- 2/3 c. Bisquick baking mix
- 1 teaspoon vanilla
- 1 c. minced nuts
- Powdered sugar
Directions
- Place apricots in 2 qt saucepan; add in sufficient water to cover. Simmer uncovered 10 min; drain. Cold; chop and reserve. Heat oven to 350 degrees. Cut butter into granulated sugar and 2 1/2 c. baking mix till crumbly. Pat in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Bake 10 min. Beat brown sugar and Large eggs. Stir in apricots, 2/3 c. baking mix, the vanilla and nuts. Spread over baked layer. Bake 30 min longer; cold completely. Cut into bars about 2 inch x 1 inch. Roll in powdered sugar. 75 cookies.
