Ampalaya with Vermicelli
Learned this recipe on mytaste online I gave it a little twist and tasted good just the same :) Ingredients
- 2 cups Ampalaya, julliened
- 300 grams pork
- 1 egg, beaten
- 2 tsp garlic, crushed
- 1 med onion, sliced
- 2 big tomatoes, diced
- 1 small pack vermicelli
- 2 cups water/broth
- salt and pepper to taste
Directions
- Saute the garlic, onions, tomatoes until tender then add the pork and continue to saute until cooked.
- Add the ampalaya and simmer for a minute then add a cup of water or broth.
- Let it simmer until half-cooked
- Add the vermicelli and simmer for a couple of minutes more.
- Add the egg then stir, then dash with salt and pepper to taste, stir for a minute then turn off the heat.
