Monggo with Alugbati Leaves
Mung beans usual recipe with a bit of a twist. Ingredients
- 1 cup Mung beans
- 1 cup Pork, slices thinly
- 1 med onion
- 2 med tomatoes
- 1 tsp garlic
- 1 pack vermicelli
- 2 cups alugbati leaves
- Alugbati leaves are available in Asian stores
Directions
- Saute garlic, onion, tomatoes, and pork.
- Stir fry until tender.
- Add the mung beans (pre-cooked via pressure cooker for 10mins)
- Let it simmer for a couple of minutes.
- Add the vermicelli, stir and let it simmer.
- Add the alugbati leaves and simmer for another minute or two.
