Zingara sauce
Ingredients
- 2oz julienne mushroom
- 5oz white wine
- 7fl oz demi-gloss
- 1 cup tomato sauce
- 1/4 cup of white chicken or white veal stock
- 2 tblespn cure ham
- 1 tablespoons of jullienne truffles
Directions
- 1. simmer mushrooms in wine.
- 2. strain the wine and save the mushroom.
- 3. return wine back to pan and reduce by half
- 4.add glace, tomato sauce, and stock and simmer for 5-10 minutes.
- 5. strain the sauce and finish it with the mushrooms, truffles, and ham
