Woodrow's Fiesta Fare Maja Blanca
I owe this recipe from my friend Woodrow who unselfishly shared this old-time favorite Filipino food which dates us to the Spanish era. What makes unique about Woodrow's maja is the egg mixture. Ingredients
- 1 1/2 kilo cornstarch
- 6 cans sweetened condensed milk
- 1 kilo white sugar
- 6 pieces grated coconut
- 40 cups water
- 2 kilos margarine
- 5 boxes sweet corn
- 24 pieces eggs, beaten
Directions
- Extract milk of coconut using 1 cup of water. set aside.
- Strain cornstarch using the 40 cups of water through a coarse cheesecloth. Cook over medium heat, stirring constantly.
- Add the milk and sugar. Stir until blended.
- Add the coconut milk and margarine little by little to avoid burning, stirring constantly.
- When the mixture is thick as paste, add the beaten eggs,and sweet corn stir until well-blended.
- Pour into plastic molders and let it cool. Freeze. Serve cold.
