whole grain Lemon Poppyseed muffins
I made these in the mini-muffin pan but filled them to the top so I could get meduim sized muffins.I used raw sugar,and agave for sweetener. Ingredients
- 3 cups whole wheat flour
- 1 cup flaxseed
- 4 tsp baking powder-low sodium, aluminum free
- 1/2 tsp sea salt
- 2 eggs
- 1 1/2 cups fat-free milk
- 3/4 cup sugar
- 1/2 cup agave
- 1/4 cup lemon zest
- 1 cup lemon juice
- 4 oz chia
- 3 tsp poppy seed
- 2 tsp vanilla
Directions
- mix dry ingredients in seperate bowl
- with standing mixer, mix wet ingredients
- add dry to wet and mix well.
- cook at 400,for 14 minutes
