  • Lemon Pasta Salad With Tomatoes And Feta

    Ingredients

    • 7 Tbsp. extra-virgin extra virgin olive oil
    • 4 Tbsp. fresh lemon juice
    • 3 Tbsp. whole grain mustard
    • 2 x garlic cloves chopped
    • 2 tsp grated lemon peel
    • 12 ounce penne pasta
    • 2 c. small cherry tomatoes halved
    • 1 1/2 c. minced red bell peppers
    • 1 1/2 c. crumbled feta cheese
    • 1 c. minced green onions

    Directions

    1. Whisk oil, lemon juice, mustard, garlic, and lemon peel in small bowl to blend. Season dressing with salt and pepper.
    2. Cook penne in large pot of boiling salted water till tender but still hard to bite. Drain. Rinse pasta with cool water to cold quickly and drain again. Transfer pasta to large bowl. Add in tomatoes, bell peppers, feta cheese, and green onions. Pour dressing over and toss to coat. Season to taste with salt and pepper.
    3. This recipe yields 8 side-dish servings.
