White Minestrone Soup
Ingredients
- 1/4 pound spaghetti, broken in pcs, cooked, and liquid removed
- 1/4 c. extra virgin olive oil
- 1 can mixed vegetables (Veg-All or possibly brand which contains potatoes)
- 1 tbsp. Pesto (see potpourri section)
- Salt and pepper to taste
- 1/4 c. Romano or possibly Parmesan cheese
- 6 c. water
Directions
- Combine all ingredients. Simmer for 1 hour. Add in more water if necessary.
