White Bean Bisque
Good hearty soup, nice on a winters evening! Ingredients
- 1 large onion
- 2 Tb. butter
- 2 cloves garlic
- 1 8 oz. slice precooked ham, diced
- 2 cans white kidney beans, rinsed
- 2 cans corn
- 2 Cups half and half
- 1 can Rotel tomatoes
- 1 cup marinara sauce
- 1 cup water
- 1 tsp. sugar
- 1 tsp. dried thyme leaves
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. dried oregano
- 1/4 tsp. crushed red pepper flakes
- 1 bay leaf
Directions
- In a 5 quart dutch oven, saute the onions in butter until tender.
- Add garlic and ham, cook for 3 minutes.
- Add all remaining ingredients and bring to a boil.
- Remove bay leaf before serving.
