White Bean & Tuna Pita Pocket
Great lunch option! Ingredients
- 5 ounce can light tuna
- 1/2 cup White Beans
- 1/2 red onion sliced thinly
- One Fresh Lemon juice only
- one tablespoon white vinegar
- 1/2 teaspoon sugar
- one tablespoon Canola Oil
- Garnish freshly chopped basil leaves
- salt and black pepper, to taste
Directions
- In a bowl add white beans, lemon juice, sugar, vinegar, oil and gently mix set aside.
- Drain tuna and add to bean mixture with two forks (separate-leave larger pieces) add fresh basil, sliced red onion, S & P, gently mix
- Open Pita halves and spoon in mixture.
- Serve and Enjoy!
