  • Waldorf Chicken Salad

    Ingredients

    • 1/4 cup honey
    • 2 Tbsp dijon-style mustard
    • 1 Tbsp poppy seeds
    • 1/3 cup lemon juice
    • 12 tsp grated lemon peel
    • 1/4 cup vegetable oil
    • 12 dried apricots, sliced (moist pack preferred)
    • 2 cups cubed cooked chicken or turkey
    • 2 apples cored and diced
    • 1 cup diced celery
    • 1/3 cup toasted sliced or diced almonds
    • 1/4 cup minced green onions

    Directions

    1. Stir together honet, mustard, poppy seeds, lemon juice, lemon peel, and oil in a large bowl.
    2. Add apricots and let stand for 30 minutes.
    3. add chicken and toss lightly.
    4. Refrigerate until ready to serve.
    5. To serve, add apples, celery, almonds, and green onions to chicken mixture; toss to coat.
