Waldorf Chicken Salad
Ingredients
- 1/4 cup honey
- 2 Tbsp dijon-style mustard
- 1 Tbsp poppy seeds
- 1/3 cup lemon juice
- 12 tsp grated lemon peel
- 1/4 cup vegetable oil
- 12 dried apricots, sliced (moist pack preferred)
- 2 cups cubed cooked chicken or turkey
- 2 apples cored and diced
- 1 cup diced celery
- 1/3 cup toasted sliced or diced almonds
- 1/4 cup minced green onions
Directions
- Stir together honet, mustard, poppy seeds, lemon juice, lemon peel, and oil in a large bowl.
- Add apricots and let stand for 30 minutes.
- add chicken and toss lightly.
- Refrigerate until ready to serve.
- To serve, add apples, celery, almonds, and green onions to chicken mixture; toss to coat.
