Vegetable Beef Barley Soup
Ingredients
- 2 pound boneless beef cubes, cut in 1-inch cubes
- 2 tbsp. oil
- 6 c. water
- 1 (28 ounce.) can cut-up tomatoes
- 1 (16 ounce.) pkg. mixed vegetables
- 5 beef bouillon cubes
- 1/4 teaspoon parsley flakes
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1/4 teaspoon pepper
- 2 bay leaves
- Dash of sage
- 1/3 c. barley
Directions
- Brown beef in oil; drain fat. Add in all remaining ingredients and simmer till tender. Remove and throw away bay leaves before serving. Makes 8 servings.
