Hi Way Restaurant Beef Barley Soup
Ingredients
- 2 c. diced potatoes
- 3 c. diced carrots
- 3 c. diced celery
- 1/2 c. minced onions
- 1/2 tsp pepper
- 1/4 c. beef base
- 8 ounce tomato sauce
- 2 c. minced beef roast Water as needed
- 2 c. barley cooked, rinsed well
Directions
- Combine all ingredients except barley in kettle. Add in water to cover. Boil till vegetables are tender, about 20 min. Add in barley, cook 15 min.
- This recipe yields 4 qts; 8 to 12 servings.
- Comments: Additional water may be needed to acquire desired consistency. If adding water, additional beef base should also be added.
