Turkey Meatloaf
Ingredients
- 2 T olive oil
- 1/2 onion, chopped
- 1 stalk celery, chopped
- 1/2 red bell pepper, finely chopped
- 1 tsp. minced garlic
- 1 tsp. of thyme
- 1 tsp. rosemary
- 1/3 cup chopped parsley
- 2 egg whites
- 1/2 tsp. Dijon mustard
- 1/4 cup ketchup
- 2 tbsp. Worcestershire sauce
- 1/4 cup soy milk
- 2/3 cup whole wheat breadcrumbs
- 2 lb. ground turkey meat
- 2 tsp. salt
- 2 tsp. black pepper
- 1/2 cup chopped canned tomatoes
Directions
- Preheat oven to 350 degrees. Heat oil and add onions, celery and bell pepper and cook until softened. Add garlic and the herbs and cook for 2 minutes. Remove from heat and cool. After cooled add the eggs, mustard, ketchup, Worcestershire sauce, and milk. Mix until combined. â¨Add breadcrumbs, ground meat, salt and pepper, and mix. Transfer to loaf pan and pour tomato mixture over the top and bake for 45-60 mins.
