My hubs is a huge fan of Subway’s meatball subs. Since he’s been forced into the roll of couch jockey during his leg break ordeal, he’s seen a LOT of commercials and has been craving one. Of course, one of theirs does NOT fit into the scheme of our diet. So this is my attempt to make a lighter version. It was quite tasty, if I do say so myself. Each meatball works out to about 62 calories and 2.75 grams of fat. I’ll leave you to calculate the rest.

Additional ingredients:
4 sub rolls
buttery spray
garlic powder
jarred marinara sauce
Directions:
Preheat your broiler. Cook’s note: The first time I made these I left the broiler on for AGES waiting for the preheat light to come on. A broiler usually doesn’t do that. FYI.
Toss everything in a food processor and blend until well combined.
Line a baking sheet with parchment paper.
Spray with cooking spray.
Using a melon baller or 1/8 cup measuring cup, scoop out mixture and roll into balls. I got about 17.
Cook under the broiler for 15 minutes or until the internal temp reaches 165 degrees.
Meanwhile, split your sub rolls.
Spritz with buttery spray and sprinkle with garlic powder.
Toast to desired crispiness.
Load each sub roll with meatballs (you can probably fit about 3-4 per roll).
Top with marinara.
