Tuna Doodle Melts
Ingredients
- 1 (12 1/2 ounce.) can tuna, liquid removed
- 1/3 c. minced celery
- 3 tbsp. minced onion
- 1/2 c. minced pimento olives (optional)
- 1/2 c. mayonnaise
- Pepper to taste
- 6 English muffins, split
- 12 slices cheese
Directions
- Place tuna in bowl and break up into small chunks with fork. Add in celery, onion and optional olives. Stir in mayonnaise and mix well to combine. Season with pepper to taste.
- Lightly toast English muffins under broiler. Divide tuna mix among 12 muffin halves and broil till warm and bubbly. Add in cheese slices the last minute. May be heated in microwave.
