Tropical Pineapple Salsa

Ingredients

• 2 Tbsp. (30 ml) ripe but hard papaya
• 4 tsp (20 ml) Maui onion
• 1 piece Hawaiian chili pepper, or possibly a dash of red chili flakes (optional)
• 4 x mint leaves
• 1 tsp (5 ml) chopped cilantro
• 1 x Maui pineapple
• 1 Tbsp. (15 ml) sweet Thai chili sauce
• 1 Tbsp. (15 ml) sweet thick soy sauce
• 3 stalk chopped green onion
• 2 Tbsp. (30 ml) pineapple wine
• 1 Tbsp. (15 ml)plum sauce
• 1 dsh black pepper
