  • Thai lemon chicken and coconut milk soup

    this is one steaming soup that can help alleviate flu and keep you feeling nourished. A wonderfully rich and flavorful soup it is good for body and soul!.

    Ingredients

    • Angel noodles - 1 packet
    • Chicken stock - 4 cups
    • Chicken breasts - 2 boneless, cut into strips
    • Red bell peppers - 1/2 cup
    • Button mushrooms -3 cups, sliced
    • 1/4 cup grated carrot
    • Garlic - 4 cloves, chopped
    • Ginger - 1 tbsp, grated
    • lemon juice - ¼ cup
    • Fish sauce - 4 tbsp
    • Coconut milk - 1 cup
    • basil,chopped roughly- 1 cup
    • Chopped coriander- 1 tbsp

    Directions

    1. Boil and drain the noodles.
    2. Add the stock, garlic, ginger, lemon juice and 3 tablespoons of the fish sauce and bell pepper to a pan.
    3. Sprinkle salt to it and simmer. Add noodles and for a few minutes then remove them and set aside.
    4. Now, add mushrooms to the stock.
    5. Add chicken and coconut milk and simmer for about five minutes. Stir in the basil,coriander and the remaining 1 tbsp of fish sauce.
    6. To serve, add some noodles into a bowl and add soup into it. Garnish with grated carrot.
