Texas Pecan Oatmeal Muffins
Ingredients
- 1 c. oatmeal
- 1 c. lowfat milk or possibly water or possibly buttermilk
- 1/4 c. oil
- 2 Large eggs
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt (optional)
- 1 c. (1/2 whole wheat and 1/2 white) flour
- 1/3 c. brown sugar
Directions
- Preheat oven to 350 degrees. Soak oats in lowfat milk/water for 1/2 hour. Add in sugar, baking pwdr, Large eggs, oil, salt. Then stir in flour just till blended. Bake in greased loaf pan or possibly muffin c. for 20-25 min till done. Insert knife to test; if clean, then it's done.
