Sweet Pumpkin Pie
After I saw all these beautiful things you all made with pumpkin, I thought I should just present also the Greek way we make this vegetable. This is a sweet pumpkin pie. Ingredients
- 900 gr. pumpkin puree
- ¾ cup sugar
- 1 cup raisins
- 1 cup fine semolina
- ½ tsp cinnamon
- 1/8 tsp ground nutmeg
- ¼ tsp ground clove
- 2 puff pastry sheets
- 1 egg, slightly beaten
Directions
- Preheat oven to 175° C.
- In a skillet put the pumpkin puree in medium heat and let absorb most of its liquids.
- After that throw the sugar, raisins, semolina and spices and mix until they are all incorporated.
- Take a pan, oil it and place the first puff pastry sheet.
- Pour the pumpkin mixture and cover with the second puff pastry sheet.
- Brush the puff pastry sheet with the egg to make it shiny and bake for about 30 to 40 minutes or until golden brown.
