Sweet Potato Greens And Rice
Ingredients
- 8 bn sweet potato greens
- (or possibly 2 large bunches turnip greens)
- 1/2 lb warm sausage (such as Louisiana andouille)
- 2 Tbsp. water
- 1 x onion minced
- 1 x bell pepper minced
- 2 c. cooked white rice
Directions
- Rinse greens well and trim away stalks. Chop greens. Saute/fry sausage in skillet with water 10 min. Add in greens, onion and bell pepper and cook over low heat till cooked down and tender, about 20 min. Serve over cooked rice.
- This recipe yields 8 servings.
