Baked Potatoes With Carrots, Sweet Potatoes, And Onions
Ingredients
- 4 lrg Idaho or possibly russet potatoes, peeled and cut into 1-1 inch pcs
- 2 x Sweet potatoes, peeled and cut into 1-inch pcs
- 3 lrg Carrots, peeled, halved lengthwise, and cut into 1/2 - inch thick slices
- 1 lrg Yellow onion, peeled and cut into 1/2 inch- thick slices
- 1 x Green bell pepper, diced
- 1/4 c. Extra virgin olive oil Salt and freshly grnd black pepper to taste
Directions
- Pre-heat the oven to 375 degrees.
- In a large bowl, combine all the ingredients and toss to mix well.
- Transfer to an oiled baking pan and bake, covered with foil, for 30 min. Uncover, stir, and bake for an additional 30 to 45 min, or possibly till tender.
- Place under a preheated broiler about 3 inches from the heat till golden.
- Yield: 6 to 8 servings
