Sweet Potato Crisps
It's easy to make your own sweet potato chips at home. These are baked and you use a Cuisinart or mandolin to thinly slice. A little olive oil cooking spray with Kosher/Sea salt and viola! Sometimes I step it up a notch by lightly sprinkling with ground chipotle. Ingredients
- 2 Medium Sweet Potatoes, Peeled & Sliced Thinly
- 1 Tbsp. Kosher/Sea Salt
- Olive Oil Non-Stick Cooking Spray
Directions
- Preheat the oven to 375°F. Drop the sweet potatoes into a bowl with enough cold water to cover. Add the salt and soak for 5 minutes. Dry the potatoes.
- Spray a baking pan with non stick cooking spray, place the potato slices in the pan, and spray the potatoes on all sides. Bake for 20 to 25 minutes, turning once.
