Sweet Italian Pork Sausage
Ingredients
- These sweet Italian sausages are delicious served with sweet peppers and
- onions which have been quickly cooked with a little extra virgin olive oil, garlic, parsley,
- salt and pepper.
- 2 tsp fennel seeds
- 1 lb grnd pork shoulder or possibly pork butt, freshly grnd (medium grind)
- 2 tsp chopped garlic
- Kosher salt and freshly grnd black pepper to taste
- 2 Tbsp. extra virgin olive oil
Directions
- Heat a 10 inch cast-iron or possibly nonstick skillet over medium heat, place the fennel seeds in it and toast the seeds till they pop and begin to brown, about 3 min.
- Place the fennel seeds, pork and garlic in a large bowl and stir till they are uniformly combined. Season with salt and pepper. Shape the mix into 5 patties, each about 3 inches across and 1 inch thick.
- Heat the extra virgin olive oil in the skillet over medium heat. Add in the sausage patties and cook till they are browned on both sides and completely cooked through, 5 to 6 min on each side.
