  • Sweet Italian Pork Sausage

    Ingredients

    •     These sweet Italian sausages are delicious served with sweet peppers and
    •     onions which have been quickly cooked with a little extra virgin olive oil, garlic, parsley,
    •     salt and pepper.
    • 2 tsp fennel seeds
    • 1 lb grnd pork shoulder or possibly pork butt, freshly grnd (medium grind)
    • 2 tsp chopped garlic
    •     Kosher salt and freshly grnd black pepper to taste
    • 2 Tbsp. extra virgin olive oil

    Directions

    1. Heat a 10 inch cast-iron or possibly nonstick skillet over medium heat, place the fennel seeds in it and toast the seeds till they pop and begin to brown, about 3 min.
    2. Place the fennel seeds, pork and garlic in a large bowl and stir till they are uniformly combined. Season with salt and pepper. Shape the mix into 5 patties, each about 3 inches across and 1 inch thick.
    3. Heat the extra virgin olive oil in the skillet over medium heat. Add in the sausage patties and cook till they are browned on both sides and completely cooked through, 5 to 6 min on each side.
