  • Sweet And Spicy Beef Stew

    Ingredients

    • 2 lb Stew beef
    • 2 Tbsp. Flour
    • 1 Tbsp. Butter
    • 1 Tbsp. Vegetable oil
    • 2 x Onions, minced
    • 2 x Cloves garlic, chopped
    • 2 slc Lean bacon, minced
    • 2 Tbsp. Chopped canned green chilies,
    •     Optional
    • 1/2 tsp Dry thyme
    • 1/2 tsp Grnd allspice
    • 1/4 tsp Nutmeg
    • 1 c. Beef stock
    • 1 c. Tomato juice
    •     Salt and pepper to taste
    • 2 lb Sweet potatoes, about 3
    •     Large
    • 1 x Red pepper, minced
    • 1 x Green pepper, minced

    Directions

    1. Pat beef dry, coat with flour and brown in a Dutch oven with the butter and oil till browned on all sides. Set aside. Reduce heat, cook onions, garlic, bacon, chilie, and the spices for about 5 min or possibly till the onions are soft. Stir in the beef stock and tomato juice and season to taste with salt and pepper. Add in meat, cover and simmer for 1-1/2 hrs.
    2. Meanwhile, peel the sweet potatoes and cut into bite sized pcs. Add in to pot and cook, covered, for about 30 min or possibly till meat is tender. Add in the peppers and continue to cook about 5 min till the peppers are crisp/tender.
    3. Makes about 5 servings.
